Chia Seed Pudding with Roasted Dates and Fresh Mint
Protein-Packed, with Fiber and Healthy omega-3's!
I can't get enough of this Chia Seed Pudding with Roasted Dates and Fresh Mint—it’s a perfect mix of health and indulgence!
This chia seed pudding with roasted dates is absolutely delicious, and may help lower blood pressure!
For an even sweeter version, add some ripe banana into the chia seed and dairy-free milk mixture before you allow the pudding to sit in the fridge overnight.
Fresh dates can be hard to locate—you can easily use dried dates here.
Pro Tip: Consider warming your dates up gently in the oven before serving!

Ingredients
4 Tbsp Chia Seeds
A Small Pinch of Ground Cinnamon
1 cup Almond Milk, or Dairy-free Milk of Choice
4 Fresh Dates, Left Whole
6 Fresh Mint Leaves, as Garnish
2 tsp Honey
Instructions
For the chia seed pudding, combine the chia seeds, ground cinnamon, and almond milk. Stir until fully mixed.
Divide the contents into 3-4 small serving glasses, and allow the chia seed pudding to chill and set in the fridge overnight.
The following morning, when you are getting ready to eat breakfast, preheat your oven to 400˚F.
When the oven is hot, place the whole fresh dates on a parchment-lined sheet tray and roast in the oven for about four minutes.
Remove the warm dates from the oven, and slice in half.
Place the roasted halved dates on top of the chia seed pudding, and garnish with some fresh mint leaves and a drizzle of honey.
