4-Ingredient GF Cookies

I've never seen a simpler cookie recipe!

I love recipes that include so few ingredients you feel an urge to make them immediately!

These 4-Ingredient cookies fit the bill!

You can add your own inclusions here as you see fit—feel free to add dark chocolate, nuts, or even dried raisins or cranberries to the mix!

Sometimes I’ll add a bit of coconut oil to this recipe if I’m looking for a softer final product.

Try these 4-ingredient cookies at home today!

Recipe for 4-Ingredient Cookies: 

Ingredients

  • 2 cups gluten-free rolled oats (190 g)

  • ¾ cup Granulated Sugar (150 g)

  • 1 egg (or 1 tsp ground flax seed + 1 Tbsp water)

  • 2 tsp vanilla extract

Instructions

  1. Preheat the oven to 190ºC/375ºF.

  2. Mix all the ingredients together in a medium-sized bowl.

  3. Grease and line a baking tray with parchment paper.

  4. Using an ice cream scoop, scoop the mixture into mounds on the tray.

  5. Press lightly with a floured fork to flatten.

  6. Bake for 10-12 minutes or until browned.
