Panellets (Pine Nut Cookies)

My earliest cooking memories as a child involve moments spent baking in the kitchen standing next to my mother, with the preheated oven giving off a delightful radiant warmth that did its best to combat the freezer-like conditions in the remainder of the house.My friends at the time would come over to visit, and I thought little about the (to me) normal winter house temperature.

These same friends subsequently joined together to officially designate our Massachusetts-based home as, “The Ice Box”.This was an ongoing joke, grounded mostly by my father’s fixation on the varied, family-adjusted views on the appropriate thermostat levels. During the winter months, when we were younger, you would regularly find our family members gathered around the kitchen table for dinner in heavy sweaters or our winter coats. It was normal. My mom explained how sitting next to the oven when it’s chilly outside can be a great way to keep warm during or after baking amazing treats, without raising your overall heating bill.

She told me this story of a friend of hers who lived in a super cold home without enough money for adequate heating in New England, who would regularly bake or reheat something in the oven, and then barely prop the oven door open, so it was slightly ajar. She would then proceed to grab a chair, a heavy blanket, and sit right next to the open oven door to eat the meal, following it up with a book and some light reading while staying cozy, taking full advantage of the residual heat from the oven.These warming anecdotes passed down from my mother stick with me, even thirty years after hearing them.

To this day, my wife makes fun of me for crouching right by the oven door as my items bake. I can’t explain it—I just love it, and it makes me feel a certain way.My oven light has long been fried-out, so it’s black inside. I mostly sit there, and revel in the smells and warmth, imagining the secret transformations that are occurring quietly within the oven. It makes me feel strongly in my bones that home baking is the closest us mere mortals will ever come to alchemy.

Growing up, our family would often make these rolled and then coated cookies, using a technique similar to what you use to make these gluten-free Panellets (pine nut cookies), where you can find the recipe below. Make these fun cookies with your kids, allowing them to roll the dough balls and coat them in pine nuts while everyone basks in the warmth of the preheating oven.

These Panellets are a traditional Catalan treat, often enjoyed during autumn festivals.

I grew up eating apple slices dipped directly into the peanut butter jar. This is an elevated version that kids will love! Don't worry if it doesn’t look as pretty as the version arranged in the photo—it’s going to taste very similar, I promise!

These Apple "Nachos" take only a few minutes, and they are so fun and healthy!  This snack is great for both kids and adults.  The chocolate-peanut butter combination is always a good idea, and using different types of chocolate chips makes the plate look beautiful!

Intro to Lacto-Fermentation – Fermented Carrot and Celery Sticks Recipe

Teaching your kids how to preserve vegetables is easier than you might imagine. It’s also a great way to incorporate some “kitchen math” into a recipe for children, where you can explain how to create a 2% final salt concentration in your combined vegetable and water mixture using a digital kitchen scale!

Whenever someone asks me about home fermentation projects for beginners, I encourage them to try a simple lacto-ferment!

Carrots and celery sticks can be mixed with salt water and allowed to lacto-ferment at room temperature. The resulting preserved vegetables are crisp, tart, tangy, and great for your gut!
