Are All Gluten-Free Breads Created Equal?

Last week, we traveled to our team’s Barcelona kitchen to film a series of step-by-step videos related to our gluten-free sourdough bread course, which will be available online for members in a few weeks!

It was a joy to be in such a beautiful studio space learning from Evelina, our super talented recipe creator! My wife Eva helped us set everything up—it was a really fun day!

To prep for this course, Evelina spent several months working on delicious gluten-free sourdough bread recipes, along with some fun recipes for items like homemade bagels using sourdough starter discard!

No joke, these were the best homemade bagels I’ve eaten in my life…

A team of researchers in Spain recently published a study in Foods journal, evaluating the nutritional characteristics of gluten-free breads compared to their gluten-filled counterparts.

Interestingly enough, many of the gluten-free breads found in supermarkets contained roughly twice as much fat compared to the versions containing gluten.

Additionally, many of the gluten-free breads were lower in fiber, except in examples of recipes where ingredients such as legume-based flours were featured.

But can you make healthy, gluten-free bread, without these high fat and low-fiber drawbacks? Absolutely you can!
