Does Diet Impact Longevity?

The VARIETY of different foods we eat is important!
As we get older, there are clearly some individuals who seem to experience fewer chronic health problems over time. But just how much of this is linked to our long-term diet?
NBC news published an article entitled, “What you eat at 40 may affect how healthy you are at 70”.
The study looked at eating patterns for roughly 100,000 individuals followed over the course of a thirty-year period!
As the NBC article notes, “A diet rich in fruits and vegetables, whole grains and unsaturated fats in midlife can improve the chances of good mental, physical and cognitive health decades later.”
High levels of processed and red meat consumption, saturated fats, sodium, and trans fat consumption were generally associated with a lower chance of experiencing “healthy aging.”
The article mentions the Alternative Healthy Eating Index (“AHEI”) — a diet that includes more nuts, legumes, and vegetables, along with lower amounts of red meats and processed foods.
The authors noted that there was the strongest correlation between the AHEI diet and healthier aging.

What is a “cornstarch slurry” in cooking? This is simply a mixture of cooking starch (in this case, cornstarch) and water, which is combined and then added to boiling liquid. When the slurry is mixed with the boiling liquid (such as a stock, soup, or sauce), the starch will gelatinize and absorb more water, which will in turn thicken the liquid.
It’s very easy to use this technique, just make sure the liquid is hot enough when you add the slurry. Also, whisk in the slurry when you add it to the boiling liquid, as the starch can clump-up if it isn’t fully incorporated.
We actually use a similar technique using agar agar when making some vegan and dairy-free versions of homemade yogurt!
