Ingredients
For the Snowmen bodies:
100 g (½ cup) dates, steamed and ground into a paste
100 g (⅓ cup + 1 Tbsp) coconut milk
50 g (½ cup) almond flour
1 ¼ cups (125 g) desiccated coconut
40 g (2 Tbsp) tahini
Zest of 1 orange
For Coating and Decoration:
Melted coconut oil, as needed
Additional desiccated coconut
Melted dark chocolate, as needed
Small sticks or skewers
Instructions
Step 1: Mix the Ingredients
In a mixing bowl, combine the ground dates, coconut milk, almond flour, desiccated coconut, tahini, and orange zest.
Mix until a sticky dough forms and all the ingredients are fully incorporated.
Step 2: Shape the Truffles
Roll the mixture into balls, creating two sizes for each snowman: one smaller (for the head) and one larger (for the body).
Stack one small ball on top of a larger ball, pressing them together gently to adhere. Insert a stick or wooden skewer through the center to secure them together.
Step 3: Coat the Snowmen
Lightly brush the assembled snowmen with melted coconut oil and roll them in desiccated coconut for a snowy finish.
Alternatively, dip the "bodies" in melted dark chocolate for a fun variation, leaving the "heads" snowy white.
Step 4: Decorate (Optional)
Use melted dark chocolate to add small dots for the eyes and buttons, and a dash of orange zest for a "scarf."
