When I first arrived in Northern Spain, I was struck by the differences in the bread culture. This impacts everything from breakfast to snacking sandwiches to bread served with lunch and dinner.
For breakfast in Spain, I was a bit surprised to see slices of the classic Spanish tortilla (a pan-sized omelet made from eggs that often includes potatoes and onions) served on top of a simple slice of untoasted baguette. The “omelet on bread” concept here felt to me…perhaps somewhat incomplete.
As a snack before lunch, you will often see a sandwich in Spain made with jamón, where the sandwich is simply bread with thin-sliced cured ham, without condiments.
After spending more time here, you learn to appreciate a sandwich that celebrates the bread as one of the main ingredients.
In restaurants here, you will often see bread served with every meal, even for the kitchen staff. I have fond memories of working in Spanish kitchens where the staff meal is a hearty stew of piping-hot lentils or garbanzo beans, served with a hunk of bread torn from a large loaf.
