Ingredients:

Dry Ingredients:

  • 350 g Gluten-free Bread Flour Mix

  • 7 g Yeast

  • 10 g Salt

  • 10 g Psyllium Husk

  • 2 Tbsp Sesame Seeds

  • 5 g Baking Powder

Wet Ingredients:

  • 55 g Olive Oil

  • 300 g Water

  • 15 g Honey

Instructions:

1. Activate the Yeast

  1. Gather your required ingredients.

  2. In a large mixing bowl, stir together the water and honey until dissolved.

  3. Add the dry yeast and let it sit for 10 minutes until foamy.

2. Form the Psyllium Gel

  1. Stir in the psyllium husk and let it sit for another 5–10 minutes until it thickens into a gel.

3. Make the Dough

  1. In a separate bowl, mix the Caputo flour and salt. Add in the psyllium gel and olive oil, then combine everything together.

  2. Mix until the dough is smooth and thick — slightly sticky but workable.

4. Shape & Rise

  1. Shape into 1 loaf or divide into buns. Place on a parchment-lined tray. Cover and let rise in a warm spot for about 1.5–2 hours, or until puffed.

5. Egg Wash & Sesame Topping

  1. Preheat oven to 200°C (390°F).

  2. Brush the top of each bun or the loaf with beaten egg, then sprinkle with sesame seeds.

6. Bake

  1. Bake for 30–35 minutes, until golden brown and firm. Let cool completely on a wire rack before slicing.

🥪 How to Assemble the Muffaletta Sandwich

A juicy, fresh and colorful sandwich — perfect for sunny days, meal prep, or a standout lunch.

Ingredients:

🍞 Muffaletta bread (cooled and sliced)
🥣 Tartar sauce
🍅 Sliced ripe tomatoes
🧅 Pickled red onions
🌶️ Grilled sweet peppers
🥬 Mix of fresh lettuce leaves and basil

Assembly Steps:

1. Slice the bread

  1. Cut the cooled bread horizontally. Lightly toast the inside if desired.

2. Spread tartar sauce

  1. Generously apply tartar sauce to both the top and bottom halves.

3. Layer the fillings
 • Add sliced tomatoes in a single layer.
 • Scatter pickled red onions on top.
 • Add grilled sweet peppers for smoky sweetness.
 • Finish with a handful of fresh lettuce and basil leaves.

4. Close, press & serve

  1. Place the top half on, gently press together, slice, and enjoy!

  2. Let it sit for 10–15 minutes if you want the flavors to settle — or eat it right away while the bread is still warm.
