This week, we spotlight a baker who mastered the art of Sunflower Sour bread at 7,000 feet.

Embracing the challenges that come with altitude adjustments and ingredient substitutions, they've achieved a loaf with fantastic taste, texture, and crumb.

Their innovative solution of using chia and psyllium husk powder is a testament to the creativity and resilience of our baking community.

My first attempt at the Sunflower Sour bread. I’m a high altitude baker (7000’)…the bread has great taste, texture and crumb.

Cooking Corner

Greek Yogurt Chocolate Mousse

Prep time: 15 minutes

Chilling time: 2 hours

Total time: 2 hours 15 minutes

Servings: 2

Things to note: to make this recipe non-vegan, substitute the coconut yogurt with Greek yogurt

Special equipment: ramekins


Ingredients:

  • 6 ounces (170g) dark chocolate, chopped

  • 1 tablespoon coconut oil

  • ½ cup (120g) almond butter

  • 2 cups (460g) coconut yogurt

  • 2 tablespoons maple syrup

  • ½ teaspoon vanilla extract

Toppings

  • ¼ can coconut cream, whipped

  • 2 tablespoons chocolate, finely grated

Instructions:

  1. In a heat-safe bowl, add the dark chocolate and coconut oil. Place the bowl over a saucepan of simmering water, but make sure the bottom of the bowl does not touch the water. Stir the chocolate until completely melted and smooth.

  2. Mix coconut yogurt, nut butter, maple syrup, and vanilla extract in another bowl. Whisk everything until it is well combined.

  3. Slowly pour the melted chocolate into the yogurt mixture, whisking continuously until fully incorporated and smooth.

  4. Divide the mousse mixture between serving ramekins, cover with cling film, and refrigerate for 2 hours until set.

  5. Once the mousse is set, remove it from the refrigerator. Garnish with a dollop of coconut cream, a sprinkle of nuts, and chocolate nibs.

  6. Serve chilled.
