Fatty Liver in Kids?

Sad A Christmas Story GIF by filmeditor

Kids in the U.S. are facing an adult-sized challenge that's hard to digest: fatty liver disease. A condition once linked to long-term alcohol abuse in adults is now cropping up in children.

It's as wild as it sounds—up to 10% of kids are now grappling with this, and liver transplants for the young are ticking up.

The world's changed. Diseases like high blood pressure and gallstones aren't just for grown-ups anymore. Our children are inheriting a health crisis that begins with their first bite of processed food.

The cause? A modern diet that's out of sync with our genetic code, stuffed with ultra-processed, sugary temptations that are easier on the wallet but tougher on the body ☹️

As these conditions creep into younger demographics, it's not just about the immediate health risks. It's a loud wake-up call for change. Our bodies, still playing catch-up from a time when food was scarce, are buckling under the weight of excess calories and sugar.

The message is crystal clear: tackle this head-on, from medical treatment to societal norms. It's not just about battling obesity; it's about reshaping a culture that's setting up our kids for a lifetime of health battles.

We need swift policy action, a shift in awareness, and a serious makeover of the food landscape. The clock's ticking for America's youth, and the time to act is now.

A great place to start is here with these EASY super bowl recipes.

Community Shout-Out

This week, we spotlight a baker who mastered the art of Sunflower Sour bread at 7,000 feet.

Embracing the challenges that come with altitude adjustments and ingredient substitutions, they've achieved a loaf with fantastic taste, texture, and crumb.

Their innovative solution of using chia and psyllium husk powder is a testament to the creativity and resilience of our baking community.

My first attempt at the Sunflower Sour bread. I’m a high altitude baker (7000’)…the bread has great taste, texture and crumb.

Greek Yogurt Chocolate Mousse

Prep time: 15 minutes

Chilling time: 2 hours

Total time: 2 hours 15 minutes

Servings: 2

Things to note: to make this recipe non-vegan, substitute the coconut yogurt with Greek yogurt

Special equipment: ramekins

  • 6 ounces (170g) dark chocolate, chopped

  • 1 tablespoon coconut oil

  • ½ cup (120g) almond butter

  • 2 cups (460g) coconut yogurt

  • 2 tablespoons maple syrup

  • ½ teaspoon vanilla extract

  • ¼ can coconut cream, whipped

  • 2 tablespoons chocolate, finely grated

  1. In a heat-safe bowl, add the dark chocolate and coconut oil. Place the bowl over a saucepan of simmering water, but make sure the bottom of the bowl does not touch the water. Stir the chocolate until completely melted and smooth.

  2. Mix coconut yogurt, nut butter, maple syrup, and vanilla extract in another bowl. Whisk everything until it is well combined.

  3. Slowly pour the melted chocolate into the yogurt mixture, whisking continuously until fully incorporated and smooth.

  4. Divide the mousse mixture between serving ramekins, cover with cling film, and refrigerate for 2 hours until set.

  5. Once the mousse is set, remove it from the refrigerator. Garnish with a dollop of coconut cream, a sprinkle of nuts, and chocolate nibs.

  6. Serve chilled.
